LEMON-MUSTARD DRESSING
1 shallot, chopped

¼ c lemon juice

¾ c avocado oil
1 T dijon mustard
1 – 2 t seed mustard

1 T honey

Kosher or sea salt and freshly ground black pepper to taste

GINGER-MISO DRESSING
1/4 c almond oil
1 T sesame oil
2 T white miso
2 T rice vinegar (or white wine vinegar)
1 inch piece of fresh ginger root, finely grated (or more, to taste)
1 garlic clove, finely grated
Kosher or sea salt and freshly ground black pepper to taste

HONEY-MUSTARD DRESSING
1/4 c avocado oil
4 T honey
2 – 3 T dijon mustard
2 T apple cider vinegar
Kosher or sea salt and freshly ground black pepper to taste

TAHINI DRESSING
1/3 c tahini
Juice of 1 – 2 lemons
Optional: a little honey, a little maple syrup, freshly chopped garlic or garlic powder, and / or chopped parsley and cilantro
Kosher or sea salt and freshly ground black pepper to taste
